On January 13, more than 30 CEE members and foodservice industry partners traveled to the Pacific Gas and Electric Food Service Technology Center (FSTC) in San Ramon, California.
During the morning session of the workshop, the energy efficiency and foodservice industries introduced themselves via a “Who’s Who in Commercial Kitchens” panel. Attendees learned about resources offered by CEE, ENERGY STAR®, the FSTC, the North American Association of Food Equipment Manufacturers (NAFEM), the Food Service Consultants Society International (FCSI), dealers such as Western Pacific Distributors, and the National Restaurant Association (NRA). CEE brought these players together to help transform the hard-to-reach commercial kitchens market.
“The ‘Who’s Who in Commercial Kitchens’ speakers were great and extremely informative,” raved Peter Tanois from Southern California Gas Company. |

A lunch time tour of the FSTC led by David Zabrowski (FSTC) and Don Fisher (FSTC) proved timely as attendees were able to sample the test results from live testing of fryers, combination ovens, and other commercial kitchen equipment.
After lunch, David Zabrowski delved deeper into the technical energy savings potential of commercial foodservice equipment, including a live demonstration of the recently invented “Turbopot,” which boiled water approximately 40 percent faster than a standard pot when placed on equivalent burners.
Many attendees cited the live demonstrations and in-depth technical information as a highlight of the workshop. “Fisher Nickel [which manages the FSTC] is a great host and has the energy to present informatively,” said Jim Wixson of Georgia Power. |
The workshop wrapped up with discussion of how to move efficiency programs to the next level of market engagement. “Wow, [I especially liked] the unplanned interaction between the interested and interesting market actors,” said Doug Dickson of Puget Sound Energy about this spirited discussion.
